Sunrise Saddle Sizzle Breakfast Casserole



I may have got clever with the name but the recipe credit actually goes to an incredible lady, Emily Lemon! She is a strong example of everything an agriculture woman should be, with a compassionate heart and willingness to serve others. She is such an asset to our community! If you ever need help she's there! Here's a quick message from her!


"We are the Lemon’s we run and own Lemon Land and Livestock, a 5th generation family farm that specializes in custom feeding and hay production. I am the certified gate opener, office manager, animal feeder, and hype girl. Though I grew up in Wyoming, I wasn’t raised on a farm. I always loved the lifestyle my friends had in agriculture and hoped one day I would raise my kids on a farm, too. 16 years later, we are living the dream and figuring out how to pass on the legacy farm one day at a time."

Sunrise Saddle Sizzle Breakfast Casserole

Can be a hearty breakfast or dinner.


Ingredients:

1lb ground beef

1lb breakfast sausage

3-4 large potatoes roasted with seasoning (leftover roasted potatoes work great!)

12oz of Colby jack cheese shredded…or measure with your heart.


Optional add ins: onions and peppers, green chilis, salsa, etc.


Directions:

  1. Cook meat in the skillet until browned and cooked well.

  2. Add in the seasoned (cooked) potatoes and heat through. Add any additional toppings like veggies/peppers you like.

  3. Top with cheese and broil on high until cheese is melted.

  4. Serve with side salad or veggie of choice!
