Burnin’ Daylight Tater Tot Casserole

If you've ever heard the quote, "Hurry it up, we're burnin' daylight!" either from a parent or one of our favorite western movies, The Cowboys, this recipe is for you! If you've never seen that movie, we suggest you eat this casserole while watching it, and soon!


This is absolutely my favorite dish to serve the morning we brand or sell calves! It's fairly quick and easy, and with tater tots, eggs, bacon, and cheese, this meal is as tasty as it is hardy! We save this meal for our special days we really get to be together doing everything that we love! Dish it on a plate to eat hot and fresh or wrap it up in a tortilla shell to go! You can even wrap in tinfoil to take with you and keep warm in your saddle bags.


First, don’t forget to preheat your oven! Next, grab your bacon and slice into bite-sized pieces. Start cooking it! While it’s cooking, beat your eggs in a large bowl. Add your milk, onion flakes, salt, pepper, and whatever seasoning you also love to add to breakfast. Don't forget to check your cooking bacon as you do so! Last, add half your cheese into the eggs. Once everything is mixed together, add your bacon to the eggs. Don’t forget to add some bacon grease for extra flavoring!


Spray your 9x13 pan and cover the bottom with tater tots, then season them if you’d like. Next, dump the egg mixture on top of your tater tots. Place in the oven! Let cook until eggs are fully baked. Add the rest of your cheese on top and let cook until melted. Leftovers taste just as good, so even if you need to make this the night before you can!

Burnin’ Daylight Breakfast Casserole

Ingredients

1 30-32 ounce bag frozen Tater Tots

1 lb bacon

2 cups shredded cheddar cheese

12 large eggs

1/2 c milk

salt

pepper

onion flakes as desired (I do about a tbsp)


Try substituting bacon for/or adding sausage or ham! Add jalapeños or other seasonings to give it just the right taste for you! Hash browns or diced potatoes work great, too!


Directions:

  1. Preheat oven to 375*

  2. Slice bacon into bite-sized pieces and cook.

  3. While bacon is cooking, beat eggs in a large bowl.

  4. Add milk, onions flakes, seasoning, and one cup of cheese.

  5. Add cooked bacon into egg mixture. Dont be shy to add some bacon grease for extra flavoring!

  6. Spray 9x13 pan and dump mixture, covering with the rest of the cheese.

  7. Bake in oven for 45 minutes, or golden brown and eggs are fully cooked. Top with a cup of cheese and cook 5 min or until cheese is melted.

  8. Dish on a plate or wrap it up in a tortilla shell
