Trailer Blazer Taco Soup

This taco soup is another one of my favorites and perfect for any day you've worked outside in the cold. This is one I have tweaked throughout the years, but first given to me by one of my aunts (who's another amazing cook!). The best part about it? It's a "dump" recipe! Which means super easy and quick!

While I was at college, I was dating a cowboy and got off work just a bit earlier than he did one night. I figured I would make him and his roommates dinner to try and impress them a little. I called my aunt up to ask what quick and easy recipes she had and she recommended something similar to this one! I must have impressed that cowboy because here we are, over 10 years and still happily married! While I can't guarantee this will help you find the spouse of your dreams, I can guarantee it to be a great meal that'll warm you right up!


As mentioned before, this is a "dump" recipe, which means you get to just dump it all in the crockpot! You'll need to take a few minutes to brown your ground beef, but while it's cooking you can go ahead and dump the rest of the ingredients into the crockpot! We love to take this soup branding or anytime we're feeding a lot of people. It's super easy, fills everyone up, and the crock pot helps it stay warm longer for days it needs to sit in the truck until work's done and we get to eat!


Side note: I've tried different flavors of tomatoes and I didn't seem to notice too much of a difference with any of them. The taco seasoning seemed to override any special way the tomatoes were prepared.

Trail Blazer Taco Soup Recipe

Crock Pot "Dump" Recipe

makes 10-12 servings


Ingredients:

1lb of ground beef

2 cans (15oz can) black beans, drained

2 cans (16 oz can) pinto beans, drained

2 cans (15oz can) whole kernel corn

1 can (14.5 oz can) diced tomatoes

1 pack taco seasoning

2 cups water


additional ingredients to top with: tortilla chips, cheese, sour cream, etc.


Directions:

  1. Brown your ground beef. As that's cooking, dump each ingredient in the crock pot, stir till well mixed, and turn crock pot on low. Add your ground beef when it's fully cooked, mix well.

  2. Let simmer on low for 2-3 hours. Watch the water content and add as needed. The longer you can keep it in, the better the flavors will blend together.

  3. Serve up and enjoy!
